Also, lampshades, framed art, a leather quilt, a hand bag, purses, gloves, anything that can be made of "garment leather" could be made of skin. It doesn't have to be a single piece of leather for any one project, a jacket is multiple pieces of dead cow. How about a human leather iPod case? Cell phone case?
These are made of latex treated to look like human skin but it gives some creative ideas about how real human leather could be used.

In Japan I think there is a museum that has tanned human skin, former yakuza, that is covered in tattoos.
We are just animals in the end. Why not use a resource?
